1/2 head large cauliflower, chopped finely

3 tablespoons macadamia, olilve or coconut oil

1/2 white onion, chopped finely

1 carrot, diced into small cubes

1 celery stalk, diced into small cubes


1/2 teaspoon salt


1/4 teaspoon pepper

3 cloves garlic, finely diced or grated

1 thumb-sized knob of ginger, grated (about 1 teaspoon)

A little diced chilli, if you like

1 tablespoon fish sauce

3 tablespoons Tamari gluten-free soy sauce or coconut aminos

2 tablespoons lemon juice

2 teaspoons sesame oil

For the omelette

3 large eggs, whisked together

1 teaspoon Tamari or coconut aminos + pinch of salt

Garnish: diced spring onions/scallions
